We use organic vegetables and home-grown herbs to serve you the tastiest meals imaginable.
We use home-grown vegetables, and support local production for local consumption.
That way, we can serve safe food and also help the environment. Food miles = zero.
Hashidate Bay Hotel serves creative French cuisine that brings out the full flavor of the ingredients and has a light finish. The main ingredients are fish from the Sea of Japan we buy at a nearby fishing port every morning. We also use pesticide-free herbs and vegetables the kitchen staff grow on-site, and organic vegetables grown by local farmers.
In the spirit of local production for local consumption, we make every effort to use seasonal, locally sourced ingredients that are safe because they're pesticide-free. The reason for growing our own vegetables and supporting local production for local consumption is that we care about "food miles," which helps us reduce transportation costs while also helping to protect the environment. ("Food miles" will be a global issue in the future.) Because we care so much about the ingredients, it'll be all the more enjoyable for you, too.

Breakfast
Breakfast is a buffet of food made using plenty of fresh, safe ingredients, all prepared in the tastiest ways imaginable. The menu includes fresh herbs the kitchen staff grow on-site, organic vegetables and fresh milk, eggs from free-range local chickens, local specialty kamaboko from Miyazu, and dried fish caught in the Sea of Japan. Start your day with a delicious breakfast in our south-facing restaurant, with the morning sun pouring in.

The thinking behind our open-kitchen restaurant is that it lets us serve freshly prepared food in good time while keeping an eye on the guests' needs, and lets the guests directly see, hear, and smell their food being made.
